Mushrooms is stepping up to the plate with its latest offerings: Shiitake and
Lion’s Mane Extracts. Darryn will describe how these innovative extracts,

Ben Hughes: Quince, Westgate on Sea

Ben is the co-owner and co-head chef of Quince in Westgate on Sea. Along
with Rafa Lopez, they have created a relaxed atmosphere. They offer a refined
menu, combining the best local ingredients and a fine wine list curated by
Master of Wine Clive Barlow. Provenance is important so expect responsibly
sourced fish in the pescetarian stew he will be creating.

Lance Corporal Williams: Welsh Guards, Canterbury

Lance Corporal Williams is a dedicated military chef in the British Army,
proudly bringing her West Indian heritage from the Caribbean into every dish
she creates.
Tanisha has served in a variety of settings, from operational field kitchens to
formal military events. Her Caribbean flair adds a unique twist to army cuisine,
boosting morale and delivering comfort through food even in the most
demanding conditions.
